Weekday Beef Hash

Ingredients:

  • 3 c. frozen hashbrowns 
  • ½ c. onion, chopped 
  • ¾ c. colored peppers chopped 
  • 2 c. leftover beef roast 
  • 3 T olive oil 
  • 1 T. minced garlic 
  • ½ c. shredded cheese 
  • Salt and Pepper

Cooking:

  1. Warm oil in skillet and add hashbrowns, peppers, garlic and onions.  Continue to stir over medium heat.  Cover and let cook about 4-5 minutes.  
  2. Add cooked roast and stir.  Heat through and top with cheese.  
  3. Cover and let the cheese melt about 1-2 minutes.
